Indian Soya Peanut Salad

Soya Nuggets are made by Nutrela and are vegetarian soya nuggets, made from non-genetically modified soyabeans and can be found in your local organic foods store.  You can substitute fried firm tofu for the nuggets.  For an easy garnish, top with fried onion rings - just like on your favorite green bean casserole dish!
 
2 Cups Roasted Peanuts                           :  
1 Cup Soya Bean Chunks 
1/2 Cup Onions, chopped fine
3 Small Green chillies, slit lengthwise  
1/4 Cup Cooked Green Peas
2 Tbs. Finely Chopped Cilantro 
Salt to taste
3 Tbs. Butter or Margarine
Fried Onion Rings for garnishing  
 
METHOD
Sauté the chopped onions until they become transluscent in butter. Add the slit green chillies to and sauté  for  5 minutes. Add the cooked green peas and soya chunks.Then add the roasted peanuts to it and sauté for 5 minutes more. Remove from heat.  Add the chopped cilantro and season to taste with salt. Garnish with the onion rings. Serve hot.
