1/2 Cup Butter
2 Cloves Garlic, minced
1/2 Cup Flour
Salt
2 Cups Milk
2 Cups Chicken Broth
2 Cups Mozzarella Cheese, shredded
2 Cooked Chicken Breasts (tenderloins work nicely), chopped
1 Cup Parmesan Cheese
1 Medium Chopped Onion
1 tsp. Basil
1/2 tsp. Oregano
1/4 tsp. Pepper
12 Uncooked Lasagne Noodles
2 Cups Cottage Cheese
2 Pkg. Frozen Spinach, drained or dry/fresh spinach
METHOD:
Preheat oven to 350 degrees.
In large saucepan, melt butter over low heat; add garlic. Stir in flour and salt. Stir constantly until bubbly. Remove from heat and stir in milk, and broth. Heat to boiling - stir, stir, stir. Sauce will thicken as it cools.
Add mozzerella cheese, 1/2 cup parmesean, onion, basil, oregano and pepper. Cool over low heat stirring until Mozzerella Cheese is completely melted.
Spread 1/4 cup of cheese mixture in ungreased 9x13 pan, top with 4 uncooked noodles. Spread 1/2 cottage cheese over noodles. Repeat with 1/4 cheese mixture, 4 noodles and rest of cottage cheese. Top with cooked chicken breast/tenderloin, spinach and 1/4 cheese mixture.
Place remaining noodles and last of cheese mixture on top. Sprinkle with remaining Parmesean cheese. Cook uncovered for 35-40 minutes. Cool 10-15 minutes before serving.
