Lemon Capellini with Caviar

Serves 6

1 lb. Dried Capellini
8 Tbls. Unsalted Butter, melted
Drizzle of Good Quality Extra Virgin Olive Oil
Zest and Juice of 2 Lemons
1 tsp. Kosher Salt + additional for pasta water
1 tsp. Fresh Ground White Pepper

150 Grams Good Quality Black Caviar

Zest of 1 Lemon for Garnish
2 tsp. Fresh Chives, chopped for Garnish

METHOD:
Bring a large pot of water to a boil. Add salt, then add pasta to water. Cook until just al dente. Drain quickly, leaving a little water with the capellini. Drizzle with good quality olive oil. Add in melted butter, lemon zest, lemon juice, salt and pepper. Quickly toss to incorporate.

Place one serving of pasta on each serving plate, top with a dollop of fresh caviar. Garnish with grated lemon zest and chives. Serve immediately.
