    Caribbean Shrimp Cocktail

    1-2 lbs. Medium Shrimp peeled and de-veined (can substitute
    pre-cooked Bay Shrimp)
    Boiling Water
    4-5 Fresh Mangos (If nice, ripe mangos are unavailable, consider
    the pre-slice version available in the produce section)
    1 Bunch Cilantro, chopped
    2 Red Onions
    6 Roma Tomatoes
    4 Red Jalapenos
    Juice of 2 Fresh Limes (can substitute lemon but use only one)
    Salt, to taste

    METHOD:
    Peel mangos, remove seed and process in a food processor into small chunks. Remove to a separate bowl.

    Combine tomatoes, cilantro and jalapenos in a food processor. Pulse until saucy and chunky. Dice onions by hand and add to previous mixture. Squeeze in lime juice and salt, to taste.

    Add shrimp to boiling water for approximately 4-5 minutes until pink and firm. Drain and chill until ready to serve.
