    Classic Yorkshire Pudding

    Serves Approximately 8 People

    1 Cup, less 1 Tbs. All-Purpose Flour
    1 tsp. Salt
    2 Large Eggs
    1 Cup whole Milk
    1/4 Cup Beef Drippings or 4 Tbs. Melted, Unsalted Butter

    METHOD:
    Whisk flour and salt together in small bowl. In a separate large bowl, whisk together eggs and milk. Add in the flour mixture and beat until well blended. Heat a 9” X 13” baking pan, preferably glass or ceramic, for 10 minutes in your oven. Now add beef drippings or melted butter to baking pan. Pour batter into pan all at once. Bake for 15 minutes. Reduce the oven temperature to 350 degrees and bake until puffy and deep, golden brown, 15 to 20 minutes more. Cut into squares and serve immediately. It deflates quickly.
