Serves 4 to 6.
Seasoning Mix:
2 tsp. Ground Black pepper
1 ½ tsp. Salt
1 tsp. Ground White Pepper
1 tsp. Cayenne
1 tsp. Paprika
1 tsp. Dried Thyme
½ tsp. Dry Mustard
3 Tbs. Unsalted Butter
1 Tbs. Lard
½ Cup Chopped Onion
½ Cup Chopped Celery
½ Cup Chopped Red Bell peppers
1 Tbs. Garlic, minced
One 4-lb. Boneless Pork Loin
METHOD:
In small mixing bowl, thoroughly combine all of the seasoning mix ingredients. In large skillet, add in butter and lard. Melt over high heat. Add in onion, celery, bell peppers and garlic. Add in seasoning mix and sauté over high heat for about 4 minutes, stirring occasionally.
Place pork loin in baking pan, fat side up. Make several deep slits in the meat to form pockets. Stuff the pockets with some of the vegetable seasoning mix. Then thoroughly rub the remaining mixture over the entire roast. Bake uncovered at 275 degrees for 3 hours, then at 425° F until dark brown on top (about 10 to 15 minutes more).
