1 1/3 All-purpose Flour
2/3 Cup Cornmeal
2/3 Cup Sugar
_ Cup Corn Flour
5 tsp. Baking Powder
1 tsp. Salt
1 1/3 Cup Milk
5 Tbs. Unsalted Butter, melted
1 Egg, beaten
METHOD:
In a large bowl, combine the flour, cornmeal, sugar, corn flour, baking powder and salt. Mix well.
In a separate bowl, combine the milk, melted butter and egg. Beat slightly with fork to incorporate. Add wet ingredients to the dry ingredients; blend just until mixed and large lumps are dissolved. DO NOT OVER-BEAT!
For cornbread, pour mixture into a greased 8” X 8” baking pan. Bake at 350° F until golden brown, about 1 hour.
For muffins, spoon mixture into 12 greased muffin cups. Bake at 350° F until golden brown, about 45 minutes.
