Fried Coconut Yams

2-3 Unblemished Yams
4 cups Vegetable Oil, for frying
1 Egg
2 cups Flour
1 Cup Unsweetened, Shredded Coconut
1 cup Milk
Dried Spices of Choice: Nutmeg, Salt, Cinnamon, Cayenne Pepper

METHOD:
Mix egg and milk together in a medium sized bowl. In a separate bowl, set aside 1 cup of the flour for dusting. Mix 1 cup of flour, coconut, and the spices of your choice.

Slice the yams into 1/2” thick pieces and dust in the plain flour and then submerge them first in the milk and egg mixture and then in the flour and coconut mixture.

Fry in oil at 350-370° F until they are golden brown. Drain on paper towel before serving.
