Vanilla Cheesecake Tart with Vanilla-Vodka Berries

1 1/3 Cups Graham Crackers
1/4 Cup Brown Sugar (packed)
1/3 Cup Unsalted Butter (melted)

3 Tbs.+ 1 Tbs.  Vodka
2 tsp.+ ½ tsp. + 2 tsp. Vanilla Extract
1 tsp. Unflavored Gelatin

Two 8-Ounce Packages Cream Cheese (room temperature)
2/3 Cup + ½ Cup Sugar
½ Vanilla Bean (split lengthwise)
¼ Cup Whipping Cream

3 Cups Mixed Berries (marion berries, blackberries,
   blueberries, strawberries)

METHOD:
To make the crust:
Preheat oven to 350°F.  Mix first three ingredients in a bowl until evenly moistened.  Place mixture into an eight or nine inch tart pan with a removable bottom.  Press crumbs over bottom and up the sides.  Bake until lightly browned, about 10 minutes.  Cool completely.

To make the filling:
Mix 3 Tbs. vodka and 2 teaspoons vanilla extract together in a small saucepan.   Sprinkle gelatin over the top and let stand for 10 minutes.  Stir over very low heat until just dissolved.  Cool until lukewarm.

Combine cream cheese, 2/3 cup sugar and ½ teaspoon vanilla extract in the bowl of a mixer.  Scrape in seeds from ½ vanilla bean and add to mixture.  Beat in cream, then gelatin mixture.  Pour filling into crust and spread to smooth.  Chill the tart for three hours or over night.

To make the topping:
Gently stir berries, 1 Tbs. vodka, 2 teaspoons vanilla extract and ½ cup sugar in a bowl.  Let stand 15 minutes. 

Slice the tart into serving pieces, top the chilled tart with the mixed berries and serve.
